In Saligos, charming small mountain village in the valley of Luz, there are a couple of bakers, Jocelyne and Daniel, helped out by Laurent and Anthony. For a love of good bread, they prepare and bake twice a week a large variety of organic breads.
Polyvalence is very important as each person takes it in turn to knead then weigh manually the dough, form it, etc. Then it's time to let it rise. When it's ready for baking, the movements are precise as there is no time to lose.
The loaves are glazed, cut, risen, then lined up in the oven. The work continues during baking as another ovenload is prepared…

Classic bread : Country, bis (semi-wholemeal), rustic.
Special bread :
Pure rye, Meteil : half rye and half wholemeal, rye / raisin, Epeautre (ancient wheat).
The Kamut (Egyptian bread with 20 to 40 % more protein than wheat, more lipids and amino acids, the better hypoallergic of the breads. Very popular with health enthusiasts.
Sesame bread, Aniseed bread (delicious with sea food), Poppy bread.

Bread with linseed and sunflower (fibre rich), bread with hazelnuts, almonds and raisins (ideal served with the cheese), bread with 5 cereals (rye, wheat, barley, rice and oatmeal).
Maize bread (excellent with foie gras), Olive bread (in cubes for aperitifs), Milk bread (raisins or chocolate/orange).
For the Kings period, Frangipanes and Milk bread crowns complete the production.
Whatever the bread you choose, it can be conserved at least 8 days in a cloth.

Our favourite
Raisin or chocolate breads, shortbread (plain, almonds / raisins / cinnamon, chocolate / orange), almond biscuits, Bilberry cake (custard cream between two flaky layers), Chaparettes (Toy speciality) for the sporty and hill walkers (sweet pastry with raisins).

You can find "la Boulangerie du Pays Toy" Mondays at the LUZ-SAINT-SAUVEUR market (July and August), Wednesdays and Saturdays at the Pau Organic Market from 7h00 to 13 h.
